Huntington, Ind. " Dr. Ruth Nalliah, associate professor of chemistry at Huntington College, recently presented, Investigation of the Stabilities of Anthocyanins in Solutions Using UV-Visible and NMR Spectroscopy, at the fall meeting of the Indiana Academy of Science at Anderson University. The lecture presented results obtained by Jordan Phillips, a Huntington College 2003 graduate, in a collaborative summer research project with the Indiana University School of Medicine, Fort Wayne and Huntington College. In the project, Phillips demonstrated how long the therapeutic compounds in berry extracts remained intact under various solution conditions. The results were of interest in nutraceutical and medical communities.
